Pearled Cous Cous, Veggie & Goji Berry Salad
Start by slicing your carrots into quarters, drizzle with olive oil, salt & pepper and bake at 375 degrees for 45 minutes.
Then make your Pearled Cous Cous by bringing 3 cups of water to a boil, adding 2 cups of Pearled Cous Cous, then bring down to a simmer and cover for about 15 minutes/until the water is absorbed.

Goji Berry and Golden Beet Salad
Cut Feta into small, thin pieces and cut tomatoes in half, or leave some tomatoes whole! Gently combine all of the ingredients in the bowl with the beets and continue to let the entire dish cool in the fridge. Serve and enjoy all on its own, as a side dish, or on top of a green salad!
Summers Bounty & Goji Berry Salad
Shred your carrot with a grater or pop it in a small food processor. Slice the Cucumber and halve the Tomatoes that are larger than bite sized. Place your mixed greens in the serving bowl and top with all of the other ingredients. Drizzle desired amount of Balsamic & Olive Oil mixture, squeeze half a lemon over the top and enjoy immediately.
